Method of preparation:

1. Set the oven rack to the lowest level and preheat the oven to 200 degrees Celsius.

2. Put the green onion, a quarter teaspoon of salt and 2 tablespoons of butter in a pan and cook for a few minutes, then place in a large bowl. Add the cow's cheese, feta cheese, beaten eggs, semolina, dill and the rest of the salt over it and mix everything well, until you get a homogeneous cream.

3. Melt the rest of the butter and grease a round pie tray 24 cm in diameter, then sprinkle the crumbs of p & acircine on its bottom (they will be mixed with butter and will become delicious).

4. Unwrap the pie sheets from the package and work quickly: grease a sheet of melted butter and place it in the shape of a pie, allowing the edges to come out. & Icircn while working with a sheet, cover the rest of the sheets with plastic wrap and a damp towel. Rotate the tray slightly, then repeat the process with the pie sheet. You need to place the sheets on top of each other so that they do not overlap perfectly, but only partially, and cover the entire surface of the tray.

Urda and Verdeata pie

For the dough, dissolve the yeast in a little milk, add the sugar and salt, the rest of the milk and flour until it comes out like a thick cream.

Mix well, sprinkle flour on top and leave to rise hot, covered with a napkin (20-30min). Then add the tomato juice, the rest of the flour, the oil gradually, and knead. The dough should remain fairly soft, so do not add all the flour at once. the amount may remain or need to be supplemented. Leave to rise for 30 minutes.

Meanwhile, prepare the filling. Crush the urda with a fork, add sour cream and yogurt, chopped greens, salt to taste and egg. Mix well.

After it has risen, roll out the dough on a plate sprinkled with plenty of flour and spread a thicker sheet. Spread the filling over it and roll.

I placed it in a spiral in a round bowl greased with oil, and after baking I cut it into slices, like a cake.

Put another sheet with the corners over the remaining corners, put the composition back and then fold again if you still have room in the tray. Beat an egg with yogurt and pour over the entire surface of the pie.

Bake for the first 35 minutes with the bottom heat only, then leave with the top heat for another 10 minutes.
Serve hot or cold with yogurt, whipped milk. It is excellent for a light dinner!
