From this composition comes a tray full of cookies.

The cold but soft butter (I put it on the grater) mix with the sugar and vanilla for 3 minutes, add the egg and the yolk and mix further then add the cream.

The sifted flour together with the salt powder, the vinegar, the lemon juice and the baking powder are put in a bowl. When the butter and sugar composition is ready, add it over the flour one and knead the dough, it will remain quite soft and sticky, but don't worry like that and it should look like this. With a floured hand, form the balls, place them in the tray, press them lightly and put the chopped chocolate and the cranberries after inspiration.

Bake the cookies for about 20 minutes at 180 degrees.

Biscuits with white chocolate, cranberries and nuts

Preheat the oven to 170C and prepare two trays with baking paper.

Beat the butter, sugar and vanilla with the mixer. Add eggs, one at a time, and gradually incorporate the flour and baking powder.

Add the chocolate pieces, the cranberries and the walnuts and mix to incorporate them.

Form 20 large balls of this dough and place them on the trays. With the palm of your hand, flatten them until you form a 1cm thick disc.

Bake the biscuits for 18-20 minutes, rotating the trays halfway through the baking time. Let them cool in the pan for 5 minutes, then take them out on a grill.

Cranberry cookies

Laly sent a wonderful recipe to our Contest: Cranberry Cookies. INGREDIENTS

1 glass of oil (200 ml glass)
1 cup yogurt
1.5 glass of sugar
2 eggs
1 teaspoon grated with baking soda
1 vanilla essence, rum
a pinch of salt
1 glass of cranberries or raisins
as much flour as it contains
lemon juice (about 1 tbsp)

METHOD OF PREPARATION

Mix the yogurt with the sugar, until it partially melts. Add the essences, eggs, salt powder, baking soda soaked in a little lemon juice, oil and flour as it contains (the dough should be slightly sticky, not very hard). At the end we add raisins, or cranberries in my case. In the original recipe it was mentioned that when preparing the cookies we grease our hands with oil. I didn't need it, the dough didn't stick. Break the dough into about an egg and form round cookies, slightly flattened, thicker than usual. Put the sugar in a bowl and put the cookies on one side through the sugar. Line the tray with baking paper and place the cookies. Bake on low heat until nicely browned. There will be some crispy cookies on the outside and soft ones on the inside.

Ingredients

Preparation

In our Thermomix glass we melt the white chocolate over time 2 minutes at 80 ° at speed 1.5. Add 60 g of sugar and 120 g of butter and program again over time 30 seconds at speed 3.

Add 280 g of cream cheese and stir for 30 seconds at speed 3. We take the glass and put it aside in the fridge for 30 minutes, so that the cream thickens a little.

Now we can do the trunk. We take each cookie in turn and spread them out to join and form the trunk. Then cover it with the remaining cream and shape the layer of white chocolate with cheese. We will put it in the freezer for about 30 minutes, so that its surface freezes.

We clean our glass and add 120 g of dark chocolate and the two tablespoons of sunflower oil and program it 30 seconds at 90 ° at speed 1.5. Add two tablespoons of liqueur and program again 30 seconds at 90 ° at a speed of 1.5.

Remove the trunk from the freezer and pour the dark chocolate on top, forming a layer. Before it dries, we place strips of candied fruit giving it a decorative shape and we will add small pistachio balls cut into pieces. We put it back in the fridge and serve it cold.

White chocolate squares with pistachios and cranberries

Most of the time, when we think of a chocolate dessert, our mind leads us to that decadent dark chocolate. Why & # 8230 because the white one also has its finesse and delicacy! Here is an example.

Method of preparation:
A simple, fast and good dessert. We need household chocolate, coconut, pistachios and dried cranberries.

In a bowl placed on a pot of hot water, melt the chocolate with the milk, stirring to melt. When it is uniform, remove from the heat and add the coconut, pistachios and dried cranberries. Mix everything well to spread evenly.

Although the weather outside does not call for autumn, from a calendar point of view it is super close and I hope to make its presence felt as soon as possible. In tandem with this transition between seasons, I want to start the recipes specific to the cold season. For today I have prepared one of my favorite recipes, namely cookies with sour cranberries and delicious white chocolate!

  • 350gr flour
  • 230gr soft fat butter
  • 1 teaspoon baking soda
  • 1 tablespoon honey
  • 1 tablespoon maple syrup
  • 2 eggs at room temperature
  • 1 teaspoon vanilla essence
  • 150gr of white chocolate
  • 150g of dried cranberries
  • 1 pinch of salt.

In a large bowl, mix the flour, baking soda and salt. Separately, mix the soft butter, vanilla essence, honey and maple syrup for 2 minutes, then add the eggs one by one.

Gradually mix the solid ingredients with the liquid ones until we obtain a gummy and dense dough specific to cookies, if necessary we add more flour. Mix the dough obtained with white chocolate flakes and dried cranberries, then wrap it in cling film and refrigerate for 2 hours.

After all this time, we shape the cookies nicely and bake them in the preheated oven at 180C for 12 minutes, but it is best to keep an eye on them. After they are baked, we put them on a grill to cool completely!

These super delicious, crumbly and chewy cookies are perfect with a large cup of coffee or hot chocolate. If you want to use sugar, you can replace honey and maple syrup with 200g of brown sugar.

How to make white chocolate with pistachios and cranberries

White chocolate broken into small pieces will be put in a bowl along with butter (at room temperature) / coconut oil, then melted in the microwave, about 3-4 minutes (taking care to check, possibly remove the bowl and mix lightly with a spatula).

After melting, the chocolate will transfer to square shape of aluminum, anointed with melted butter, leveled with a spatula and added fried pistachios and crushed with a knife.

Above, from place to place can be added dried cranberries, both for appearance and consumption.

The form with white chocolate and pistachios will be refrigerated for about 1-2 hours, then removed from the form on a countertop and portioned into small pieces.
