The recipe for these lemon biscuits has been going crazy on the facebook group for a while, proposed by elena the first time, they were made by everyone except me, the other night, I wanted cookies and lemons in the fridge and I was tempted to make this recipe. These lemon biscuits are fragrant and crumbly and are ready in no time, the perfect recipe for this rainy Saturday afternoon. I am in Amsterdam for the we, the weather is not the best but the city is wonderful, today the planned stops are the market and the van gogh museum and then I will do my usual gastronomic tour to discover Dutch flavors. How to make lemon cookies
Whip the sugar with the butter until it forms a cream.Add the egg, then once blended add the grated lemon peel and juice.
Finally add yeast and flour and knead until a soft dough is obtained.
Let the dough rest in the fridge for 1 hour.
Resume forming balls the size of a walnut then roll them in sugar and icing sugar.
Put on a baking sheet and bake at 180 degrees.
Cook for 10 minutes, then allow to cool before lifting and serving.
